BBQ Chicken Loaded Sweet Potatoes



A guilt free dinner crammed full of the tastiest flavours. A creamy avocado, crumbly feta, sweet BBQ chicken and wholesome sweet potato, what more could you ask for.

Me and William were having one of those lazy, hungover induced Sunday's, which I have to admit - happen once in a blue moon. The last thing I wanted to do was prise myself from the warmth of my duvet to make a Sunday roast….so I didn't.

Instead we walked the 10 steps to Sainsburys local to pick up ingredients - actually, I tell a lie - William did…I stayed indoors in my jammys…

These took about 45 mins to make (as I cheated and used the microwave). You're probably thinking I'm the worst girlfriend in the world, but in my defence William did then precede to sit and watch the football whilst I cooked so, I think I'm allowed to cut corners a little…non?

They were belly warming and delightful to say the least. I will be making these weekly me thinks.




What You'll Need //

For 2 People

2 Sweet Potatoes
2 Chicken Breasts
Big squidge of BBQ sauce
Red Onion
Salt & Pep
Avocado
Feta for crumbling


The proper way to do potatoes - stab your tattys with a sharp knife several times, rub the skin with olive oil and a sprinkling of salt and pepper. Bake in the oven for an hour (ish depending on potato size)
Betty's cheat way to do potatoes - repeat the stabbing and rubbing of condiments, microwave for 10 minutes then finish off in the oven on 180 degrees C for 15 minutes.

Dice the chicken into small bits and finely chop your red onion. Pour a glug of olive oil into your saucepan and brown the onions for approximately 2 minutes on a medium heat before adding the chicken to cook through.

Squidge in the BBQ- as much as you want really, to cover the chicken and then a bit more so it's not too dry when it reduces. Stir and simmer for 5 mins.

Slice open your tattys and stuff in your BBQ chicken. Crumble some avocado & feta on top and away you go.




The only down side was I was super full so there was no room for desert :( … there was room for a few Quality Streets though…does that count as pudding?
