Granny Granny Cooooool, Granny Granny Coooool, I've now had this song stuck in my head all day long. And now so will you *monkey hand over mouth laughing emoji*

The lovely team behind Granny Cool sent me into a cosy autumnal frenzy after sending my some delicious marmalade and curd goodies to try. I have to say, I'm a sucker for a preserve...

Dream Scenario:: Packet of digestives, thick layers of preserve, Take Me Out on TV.

I timed my baking perfectly as I've had one of those 'sorting out my life' kind of days. I wrapped myself in a blanket, steamy cups of tea constantly in hand and haven't drawn breath from my laptop screen. So a comforting slice of something scrummy was certainly needed to keep me going on several occasions.

I would merrily shower in a bucketful of this marmalade, but I didn't think that would be very blog photo friendly, so decided to bake a sticky marmalade loaf instead :)

What you'll need //

110g butter
75g light brown sugar
2 eggs
120g Granny Cool marmalade
1 orange
175g self raising flour
half tsp baking powder

What to do //

Preheat oven to 180 degrees C fan. Grease and line a loaf tin.

Cream together the butter and sugar then mix in the eggs and marmalade, saving a couple of tablespoons of marmalade for the glaze.

Grate the orange zest into the mixture but be sure to save a couple of sprinkles of zest for decoration. Same with the juice, squeeze about 3/4 of the orange juice into the mixture and save the remainder for later.

Sift in the flour and baking powder, mixing thoroughly.

Pour into your loaf tin and bake for approximately 45 minutes or until a skewer comes out clean.

Whilst still warm, poke a few skewer holes into the top of the loaf and pour the rest of your orange juice evenly over the loaf.

Leave to cool on a rack before spreading a thin glaze of sticky marmalade over the top and sprinklings of the zest.

Mmm so moist. (I've just ruined everyone's day by saying that word, but it is so moist!)

I was going to be a complete fattie boom boom and spread my Granny Cool ginger curd onto a slice of the marmalade loaf...but I thought that would be a bit piggyish. 

WHO AM I KIDDING I DEFINITELY DID THAT!
